Microwave Magic: Cure for Dorm Starvation Syndrome

The included recipe hopefully will act as a starting place for you to explore the world of pouch cooking. Try it out, and experiment for yourself. Like I said before, the possibilities stretch as far as you can imagine; but one thing is for sure, when you are in need of a fresh change, pouch cooking can be just what the doctor ordered.



Recipe: Lemon Chicken and Vegetables
1 bell pepper
1 half onion
1 clove of garlic
2 chicken breasts
½ cup carrot (optional)
Lemon slices
Olive oil
Salt and Pepper (about a pinch of salt and a generous pinch of pepper)
Liquid (chicken stock or water)
Parchment paper

Cut the bell pepper and onion into a one-inch dice. Mince the garlic. Peel and chop the carrot into nickel-sized discs. Cut the chicken breast into cubes. Lay out a 1 to 2 foot sized strip of parchment paper and arrange on one half of the paper the vegetables (seasoned and dressed in oil) into a bed for the chicken to sit upon. Drizzle oil over the chicken and season. Lay lemon slices over the chicken. Pour about a tablespoon of the liquid over the chicken.

Fold the other half of the parchment paper over to cover the food. Crimp the edges of the paper starting at one corner, moving along the edge, and ending at the opposite end. Leave a small hole at the end of the pouch for steam to escape.

Cooking times will vary with the size of your vegetables and chicken. Start with 4 to 5 minutes, and peek into a piece of chicken to make sure it's cooked. Enjoy.
